Grown high in the mountains of Chiapas, this coffee features large, dense beans that develop slowly at elevation, building sweetness and structure in the cup. It comes from a network of small, family-owned farms — many operated by producers of indigenous heritage. The region’s coffee culture was shaped in part by the Zapatista movement of the 1990s, which helped protect smallholder farmers and prevented large corporations from dominating production.
